An Indian Kathi Roll Food-truck turned Restaurant
Roll Pod was one of the first Indian restaurants I visited in Seattle, introduced to me by a friend.
We were classmates in undergrad and reconnected after I moved to Seattle.
We had planned to meet up at Marymoor Park, but before that, she wanted to pick up a takeaway order from the Bellevue brick-and-mortar location.
When I heard the name, it didn’t ring any bells, and I assumed it might be some casual falafel roll spot. But it turned out to be my favorite kind of place: Kathi rolls.
Naturally, thousands of miles away from home and missing my evening walks to Market No. 1 in C.R. Park, hearing “Kathi roll” felt like music to my ears.
A good thing about this spot was that it had both vegetarian and meat options, so we both picked our favorites and enjoyed them out in the open under the gloomy Seattle skies.
It was the kind of meal that felt simple, comforting, and unexpectedly familiar.
The Roll Pod started as a food truck by founders Pramal Kumar and Anubha Singh, who turned their home recipes into a portable street-food concept.
They began operating in South Lake Union around 2016–2017, and the brand has since expanded across Seattle and the Eastside, including a brick-and-mortar restaurant in Bellevue.
What makes the concept special is that it was built around food that is easy to carry, easy to eat, and full of familiar Indian flavors.
The name “Roll Pod” refers to their signature Kathi rolls as individual “pods” of food: self-contained, handheld meals built on roti, often with a pan-fried egg layer, wrapped around spiced fillings, chutneys, salad, and lemon.
They also offer rice bowls and other Indian comfort-food favorites, which makes the place feel like a fast-casual version of the food many of us grew up loving.
Finding Roll Pod in Seattle felt like a comforting connection to home, a little piece of Delhi & Kolkata street food tucked into a new city, perfect for those evenings when you just want something warm, familiar, and easy to eat while you’re wandering the streets.
